it has been a rough week food wise!  last night i actually had frozen breaded tilapia and box mac n cheese!  i did have an arugula salad with it however, so something was on the dense side!  tuesday night, i threw stuff together without a plan again.  chicken, corn, edamame, and herbs. 

6-8 oz chicken breast, cut in bite-sized chunks
2 tbsp chopped fresh herbs like thyme and rosemary
2 tbsp olive oil

2 ears fresh corn, kernels cut off
1.5 cups shelled edamame, frozen or fresh
1/4 cup stock

marinate chicken chunks in oil and herbs for at least 30 minutes.  heat large skillet, cook chicken first with all oil and herbs, brown on both sides.  then add veggies and salt and pepper.  cook this for 8-10 minutes, until corn and soybeans have softened up a bit.  then add stock and cook another 3-5 minutes.  that's it!

it has been somewhat of a high stress week for me, but i am getting it together.  ryan and i are planning a National Parks trip out west in the fall, and tuesday night we got a letter saying that our permit request for backpacking in the Grand Canyon got denied!  we were pretty bummed!  so i have been trying to figure out other options.  we really want to do back-country camping mostly but may have to settle for a few structured campgrounds instead.  you really need to plan far in advance if you want to do the more popular hikes/back-country activities. 
i am also, slowly but surely, trying to figure out what needs to get done to start my muffin business!  man, there are so many hoops to jump through!  hope to have a good starting point going and be able to sell on a larger scale by the end of the summer :) 

i got some good stuff planned for the rest of the week and over the weekend.
sweet and hot eggplant and lentils
salmon with pea shoot and tarragon rice salad
braised chicken and mustard with tomato-basil white beans - ryan's parents are coming this night, so we'll see if they enjoy what's on the menu!
