after a long weekend of hiking, camping, and road racing (ryan did the Peachtree), we came home to a not-so-full fridge and no plans for dinner for monday and tuesday nights.  i also cannot get to the grocery store until wednesday morning because i am super busy at work tomorrow making up for the 4th.  i did have a few veggies left in the drawer, some protein in the freezer, tons of condiments on the shelves.  i also made a big portion of farro last week.  so....this is what i came up with...

green pepper, shrimp, and farro salad with tahini soy dressing
throwing stuff together isn't really a innate least i don't believe so.  i think it takes practice and understanding what you like to eat together. i think flavor combinations are pretty personal.  and sometimes what you think may go really well together doesn't work at all!  you gotta play around with it, try different stuff, use my suggestions and add or subtract something to make it your own! 
here is what i mixed together tonight...
2 small green peppers, small dice
1 jalapeno, seeds and ribs removed, small dice
10 oz peeled and de-veined raw frozen shrimp, thawed
2 cups cooked farro (300grams)
2 tbsp tahini (peanut butter would be a good substitute)
2 tbsp soy sauce
juice from 1/2 lemon
1/4 cup golden raisins

i sauted up the peppers in a cast iron skillet with a little oil over medium high heat for about 10 minutes.  then i added the shrimp and cooked it 3 more minutes.  then i mixed it with everything else in a large bowl. 

it wasn't as good as my awesome meal last week, but it definitely passed the clean the plate test!
sometimes you may think you have nothing around the house to make for dinner, but maybe if you gave it a chance before you go ahead and go out to grab something, you could surprise yourself!   check your freezer, check your shelves, get creative!
