all i did was pull um out of the freezer and bake um according to the package directions.....

HA!.....fooled ya for a minute, didn't I?   no way did i go that route!!!

it took a little more effort than that! 

12 ounces baby gold potatoes
2 tbsp egg whites
1 tbsp corn starch
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp cayenne pepper
1 tsp whole wheat flour
2 tbsp vegetable/canola oil
1/4 tsp salt

put potatoes in a large pot of cold water, bring to a boil, reduce heat and cook for 10 minutes, until just fork tender.  drain and allow to cool for 10-15 minutes.

chop up the potatoes very roughly with a large knife OR you can shred them using the attachment on the food processor or with a mandolin.   do NOT mash/puree them in the food processor with the regular blade, this will cause them to become gummy!

once chopped, place them in a large mixing bowl with the egg whites, cornstarch, cumin, coriander, and cayenne (you do not have to use all of these spices AND you can add some extra if you like).  stir to combine all ingredients.  oil up your hands a bit and oil up a plastic cutting board and form potatoes into two equal logs.   i'd say about an inch thick and foot long.

cover and refrigerate the logs for at least 30 minutes.  cut each log into 8-10 equal pieces.

toss the pieces in the whole wheat flour gently, maybe do 5-6 at a time, then place them on a cookie sheet (i like to line it with foil for easy clean up).  drizzle the tots with the oil and toss them around so every one is coated completely!  sprinkle with salt and bake in a pre-heated 450 degree oven for 30 minutes, turning once at the half-way point.  place them in a single layer on top of a couple of sheets of paper towel to allow the excess oil to drain away.

these were a little more dense on the inside...not as light and fluffy as the frozen processed kind, but were definitely crispy and crunchy on the outside.

we had them with some small quick-baked lemon-dill shrimp. 

get you some organic real-sugar ketchup to go with your tots and you got it made!!!

off to do a trail run...hope there aren't too many puddles to dodge!   ryan is going to be sweet (or maybe i shouldn't say that!) and go biking with me tomorrow and help me do one last hard tempo ride before my race in 1.5 weeks.   i think it will hurt a bit ;)
