tonight i made my pumpkin, or should i say squash, pancakes!  they are so yummy!  ryan (my husband) loves them!  i need to have him write a testimonial!  each serving is only about 350 calories, and that is with 1 tablespoon agave syrup.  here is the recipe...
2/3 cup whole wheat flour
1/4 cup almond meal
1 scoop unflavored whey protein powder (optional)
1.5 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 egg
3/4 cup skim milk
3/4 cup canned pumpkin

combine all dry ingredients, then add wet and stir til just combined and cook in non stick skillet.  makes 6 normal sized pancakes.  like i said above, we put just a little agave syrup on top to sweeten it up, but they are good plain too!

also wanted to let you all in on a little experiment ryan and i are doing this month....we are going to try our best not to eat chicken!  why?  well, just see the movie "Food Inc." and you will know why!  but the main reason is, chicken is WAY over eaten!  i know it is a great lean protein, but there are so many other protein sources out there to chose from and we are going to broaden our horizons!  we are really trying to make the right food choices these days, not only for our health, but for the environment and sustainability in the food supply!  i really want to start eating more fish, but want to make sure i make the right choices there too!  this is a great website for info on seafood in terms of sustainability and mercury levels...
