i am sorry i haven't posted in a while, i have been super busy, but i will try to get in a few this week! 

this recipe is very similar to my sweet potato maple pecan muffin recipe.  one difference is the syrup goes on top instead of in the batter. 

1 cup whole wheat flour
4 tbsp ground flax seeds
1 tsp baking powder
1/2 tsp salt
1/4 tsp cinnamon or allspice (optional)
1/4 cup water
1 cup almond milk (cow's milk or soy milk work too)
1 cup cooked sweet potato
1 tbsp honey
1 tbsp canola or vegetable oil
1 ounce chopped pecans (about 1/4 cup)
real maple syrup, all you need is about a tablespoon per serving.

makes 2 large servings (4 pancakes each)

combine first 5 ingredients in medium mixing bowl and lightly whisk together.  add all wet ingredients plus pecans and whisk just until combined, do not over mix.   drop about 1/4 cup of batter for each cake on pre-heated non-stick skillet lightly sprayed with oil and cook a few minutes each side until golden brown.   this is a thicker batter, so you may need to spread it into a cake lightly with the back side of a fork or spoon. 

top with maple syrup and enjoy with some scrambled eggs for a hearty breakfast or like we did...breakfast for dinner!   a treat for Ryan!

i have a pretty busy next couple of weeks.  my triathlon is this weekend and my brother's wedding is next weekend.  i will try to post as much as possible, but it may not be every other day like usual.  thanks again to my loyal readers, i love hearing that you are enjoying the blog.  let me know if there is something i can do to improve!  soon i will be getting a twitter account, because i hear that it is a great way to get the word out and expand!  plus, i am still working on a DD facebook page.
