-mashed and topped with a touch of brown sugar and toasted walnuts
-grilled rounds topped with lime zest
-OR go super indulgent with my dad's caramelized T-day sweet potatoes....lots of butter and brown sugar heated in a non-stick pan, add par-cooked 1/2 inch potato rounds, carmelize both sides to golden brown!... SWEEEEEEEEEEET!!!

monday, i made sweet potato chili...threw everything in crock-pot for 5-6 hours...
1 lb ground venison, browned
1 medium sweet potato, cubed up
1 can diced tomatoes
2 cans tomato sauce
3 garlic cloves, minced
1/2 onion, chopped
1 tsp cinnamon
1 tsp coriander
1/2 tsp dry mustard
1/2 tsp chayenne
1 tsp smoked paprika
2 tsp chili powder
1/2 tsp salt
if you don't have everything, don't worry...the most important spices are chili powder, cinnamon, and salt/pepper.
ryan LOVED it...gave it a 4.5!

tuesday, i skipped the sw.pot. and did kale pizza.

tonight, i did my twist on fish and chips!
thinly sliced a sweet potato with a mandolin (not the instrument!), about 1mm, tossed with olive oil, cinnamon, and chayenne, and baked at 400 for 25-30 minutes, until browned and toasty like a chip, sprinkle with a little salt while still hot.  served with tilapia breaded with panko, parmesan, garlic powder, salt, and pepper, and lightly pan fried in evoo.  very tasty!

friday, i hope to do a coconut sweet potato risotto...sweet and savory.  stay tuned!
