4 bunches of bok choy

chopped and washed

1 tbsp vegetable/canola oil
1 green onion, small dice
1 clove garlic, minced
1" cube fresh ginger, peeled, minced
1 tsp honey
1 tsp brown sugar
1 tbsp cornstarch
2 tbsp soy sauce
1 tbsp red wine vinegar
1 tsp sesame oil
1/2 tsp chili sauce or cayenne pepper
1/2 tsp fish sauce (optional)
1 tbsp chopped fresh parsley (optional)

heat up a large skillet over medium high heat.  add oil, bok choy, and green onion.  saute for 8-10 minutes.  in meantime, combine all other ingredients, except parsley, making a slurry.

pour the slurry over the bok choy and cook an additional 3-5 minutes, stirring frequently.  top with parsley.

this was a VERY intensely flavored dish.....i recommend serving it over a grain...brown rice or whole wheat pasta would be nice.  i actually saved some to mix with pasta later today or tomorrow. 

i ate it with steamed edamame for some protein.

bok choy AKA pak choi are alternative names for Chinese cabbage.  it is very high in vitamins A and C and a good source of Iron and Calcium when cooked!  you can eat both the stalks and the leaves.  the stalks are similar on texture to celery without the stringiness, and the leaves are like delicate Romaine lettuce with a stronger flavor.   this vegetable is mostly used in stir-fries, but can be thrown in soups or pasta, or simply steamed.  it goes well with other eastern/Asian flavors, like ginger, sesame, and soy. 

i had another busy weekend!  the Good Food Block Party was fun.  it was great to see the local chefs doin their thang!  some of A-towns A+ restaurants helped make it happen....Farm 255, The Last Resort, Five and Ten and The National, plus Gosford Wine and King of Pops, where i got a salted chocolate popcicle that was to die for!!!  had some delicious dishes including soft crustinis with some amazing fresh cheese and grilled hotdogs and slaw, and a couple of super DENSE salads that were very yummy.   the Twilight Crit was very fun....we had a primo spot thanks to our friends James and Jessica!  and yesterday, Jane and I went to Lake Lanier to ride the bike course of the upcoming Irongirl tri...it was an adventure huh Jane???   made some wrong turns, had some cramping issues, and had to pass by a huge house fire twice!  we made it ok though, just did a couple more miles than we planned!  less than 2 weeks to race day!
