tonight i was inspired by a variety of cultures to make one yummy dinner!  if i ran a restaurant or had dinner guests, i probably would not serve these two things together, but for just ryan and i at home, it was more than fine!  Asian slaw and smoked salmon on roasted garlic Naan (Indian flatbread) with lemony dill and caper sour cream spread. 

the was easy peasy to make, not much time at all is needed!

Asian slaw
2 tbsp light mayo
2 tbsp Bragg liquid aminos or light soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
1tbsp honey

one 12 oz bag of broccoli slaw

combine first 5 ingredients in large mixing bowl and whisk until combined, then add slaw and thoroughly coat.  this can be done early and saved for later.

If you thought that was easy, get a load of this.....
buy a quality pre-made Naan, i decided to go with a roasted garlic variety, and top it with the sour cream spread and some good thinly sliced wild caught smoked salmon.
Lemony dill and caper spread
1/4 cup light sour cream
pea size dab of dijon mustard(optional)
1 tsp capers
1/4 tsp dill, i used dry instead of fresh this time, both will work!
1/2 tsp lemon zest
1 tsp lemon juice
salt and fresh ground black pepper
combine and spread evenly on two Naan and top with 3 oz smoked salmon

i have a pretty busy weekend coming up, so i may not post again until late sunday or monday!  gonna get outside tomorrow in our 75 degree weather and do some biking, got a 10k to run saturday morning, house cleaning and a nice dinner in the afternoon and evening, and another bike ride on sunday.  have a wonderful one!  stay DENSE!
