get it while the gettin is good!

i am talking about produce people....corn, tomatoes, berries, squash, cucumbers, peppers, beets, eggplant, grapes, melons, and clementines....just to name a few!   the last few weeks in the produce box that i get from a local farm, we have been getting tons of squash!!!!  i am trying to come up with interesting ways to use it!  and although it is not one of the most nutrient dense veggies (or should i say fruits) around, it is still very low in calories and very filling!  last night i sauted it up with some purple peppers, fresh corn, garlic and tomatoes.  it was so refreshing!  a nice summer succotash!  tonight, i am shredding it up and combining it with ground bison and tomato sauce for a thick and hearty sauce to go with whole wheat noodles.  other ways to use up some summer squash is to shred it up and use it to make zucchini bread, or roast it up with some darker veggies like beets and eggplant, then blend with some canned tomatoes for a soup or pizza sauce. 
i have also been enjoying some sweet corn lately.  i love cutting it off the cob...you can eat it raw if you like!  plus, if you cut if off and store it in a freezer bag, it can last a few months!  a lot of people these days seem to stay away from corn because it is considered a starchy vegetable and is not recommended on some of the popular diets....to this i say, seriously?!   it is low cal, high in fiber, high in vitamin C, thiamin, folate, and magnesium, and contains numerous phytochemicals.  AND it contains a decent amount of protein.  one cup serving = 132 cals, 30 carbs, 4g fiber, and 5g protein.   good ideas for corn....throw in soups, keep it raw and toss with other veggies and a light vinegarette for a cool salad, mix with black beans and do a mexican night, make a light creamed corn, simply saute and toss in a ton of fresh basil at the end. 
i have also been eating my share of cucumbers, berries, and grapes lately.  yesterday, at the grocery store, i bought a big bag of clementines.  they are so easy to peel and contain no seeds.  such a great sweet treat after lunch!
