Roasted Butternut Squash Soup
1 medium butternut squash**
1/2 onion, peel and chop in quarters
5 large garlic cloves, keep skin on
2 tbsp olive oil
3-4 tbsp kefir (or sour cream)
2 tbsp grated parmesan cheese
1/2 tsp nutmeg
1/2 tsp coriander
salt and pepper to taste
1/2 cup stock, chicken or veggie

preheat oven to 375.  **cut top/stem off of squash.  carefully cut round end of squash away from long skinny end.  then cut each piece in half lengthwise.  scoop out seeds inside round end with a large spoon.  place squash(flesh side up), onion, and garlic on sheet pan, drizzle with oil and sprinkle with a little salt.  roast for 45-50 minutes until soft and slightly brown.  take out and let cool at least 10 minutes.
scoop squash flesh out(discard skin) and place in food processor along with onion and garlic.....squeeze soft garlic flesh out of hard paper skin.  also add kefir, cheese, and spices.  put cover in place and turn processor on low and stream in stock.  keep going until it is at your desired consistency. 



top with a little drizzle of olive oil and sprinkle with a little more nutmeg.  we enjoyed this with some roasted Sockeye Salmon.



Cucumber Gazpacho
2 long sweet cucumbers, peeled, cut into chunks
1 small or 1/2 large leek*, white part only, cut into chunks
1 jalapeno, ribs/seeds removed
1 clove garlic, peeled
juice from 1/2 lemon
2 tbsp white wine vinegar
1/4 cup chicken or veg stock
salt and pepper to taste
1/4 cup extra virgin olive oil

put everything except oil in food processor and blend on low.  stream in olive oil and process until desired consistency is reached.  can add more olive oil if you want it richer and smoother!!!  this soup is served cold.
*leeks are grown in sandy soil, so cut off green woody ends, cut white part in half lengthwise and run cool water over it separating the layers to get rid of any grit.  then cut in chucks and put in processor.


we enjoyed this with some heavenly halibut over quinoa puttanesca.


i also made some lavender ice cream saturday night and i thought i was eating a bar of soap!  ryan actually like it, so he finished off all the leftovers!!!  you know, i really don't enjoy the smell of lavender, so it is not surprising that i don't enjoy the taste!!!
