2 LARGE bell peppers, any color
6-8oz lean ground meat, i used venison...turkey, beef, bison would also work!
1/2 onion, small dice
2-3 garlic cloves, minced
1 tsp fresh thyme, remove from stems
1/4 cup cooked quinoa, plus extra as side dish!
1/2 tsp ground cumin
1/2 tsp ground coriander
pinch (1/4 tsp) ground cayenne
1/4 cup stock
2oz feta cheese

cut tops off peppers like you would when carving a pumpkin.  discard tops and remove all seeds and ribs.  place peppers, cut side up, on a baking sheet, spray or drizzle with a little canola oil, cover in foil and bake at 375 for 15 minutes until slightly tender.  In the meantime, brown up meat, add onion about mid-way through, add garlic, thyme, quinoa, seasonings, and stock at the end when the meat is almost done, cook for about 2 more minutes until most of the liquid is absorbed.  Stuff peppers all the way to the top with the meat mixture, place foil back on and cook for about 30 minutes.  Take out, remove foil, and top with feta, cook another 5 minutes until feta is slightly melted and edges of peppers are slightly browned.  Serve with quinoa mixed with pesto (recipe at bottom of dense dishes page!).

you can of course make this dish vegetarian and do any type of legume (beans) instead!!!

on a non-food related note...well kind of....i wanted to share my appreciation for one of my favorite skin care products...

Burt's Bees 100% natural facial cleanser.  This product amazes me because it is pretty much entirely oil, yet it removes the oil from my face!!!  It contains olive oil, orange oil, oat oil, rosemary leaf oil, oat flour, and vitamin E and beta-carotene!   Stuff i would put in my mouth, i also put on my face!!!  I apply it dry as i feel it penetrates deeper into my pores.  Give it a try and let me know whatchya think! 

hoping to catch up on my sleep tonight...i think i got 2, maybe 3 hours last night!  don't really understand why.  i think maybe when i have a super busy weekend, instead of falling into bed exhausted, my body and mind wants to keep going.  plus, the storms didn't help.
