i used the 2nd and final can of the Captain Jim's smoked salmon last thursday night.  this time in a chowder.

2 garlic cloves, minced
1/2 onion, small dice
3 celery stalks, small dice
1 red or orange pepper, small dice
2-3 cups stock, chicken or veggie
5oz frozen corn
6oz smoked salmon, flaked or small dice
5oz potatoes, medium dice, i used a mix of baby potatoes
fresh thyme, about 1 tsp
salt, 1 tsp
pepper, 1/2 tsp
mascarpone cheese, about 4oz (optional), could also use sour cream

3-4 servings

combine everything except mascarpone cheese, mix thoroughly....can do in a crockpot on low for 4-6 hours or on stove top in large pot on medium-low heat for 1-1.5 hours.  if done on stove top, saute garlic, onion, celery, and pepper in a little oil first to develop flavor, then add all other ingredients.   top each serving with about an ounce of mascarpone cheese and stir in for a luscious, creamy texture.


this past weekend, i went up to Blue Ridge, Ga for my soon to be sister-in-law's bachelorette party!  it was great fun!  her good friend Rhiannon did a shower saturday night and made some great food!  here are a few pics...

chicken sausage and veggie skewers, mushroom turnovers, 2 types of flatbread...


...sun-dried tomato, basil, and fresh mozzerella and pesto, salami, and 3 cheese.  both very good!


Mochi Balls, which are ice-cream surrounded by dough....they were INTERESTING!  loved the ice-cream, the raw dough outer layer was throwing me for a loop!  supposedly, these are enjoyed immensely in Japan. 


fresh strawberries with chocolate, caramel, whipped cream, and mascarpone cheese dipping sauces.


a prosecco bar with fresh fruit and sweet juice...nice way to add some 'density' to the party!


we had a choice of mango, orange, pomegranate, and blueberry!


and we each had our own bejeweled glass!

Jessica, the bride-to-be, seemed to have a wonderful time as well!  i am so honored to be a bridesmaid AND so happy she is joining our fam!!!
