is a BIG key to good nutrition.  it takes practice.  it doesn't happen overnight.  it takes a little time and sacrifice.  but it is sooooo worth it.  body and mind!  i take about 15 minutes on sunday or monday and plan out my entire week.  it used to take me longer to do this, but again, with practice, it becomes easier and easier!  i also used to go through food phases, meaning i would eat the same thing on mondays, the same thing on tuesdays, etc, etc, for about 6-8 weeks, then i would change it up for the next 6-8 weeks.  that is a good place to start.  now, after YEARS of practice, i am very good at it and i am more adventurous, so i plan out different things every week.  do i eat some of the same things each week?....of course, but i am not stuck on those things everyday.  and, since i get most of my veggies from Roots Farm, i need to switch it up to accommodate for the new and unique produce.  i deeply believe in variety, but i do know that it takes some time to get used to the idea, especially if you eat the same thing day in and day out!  it is scary, overwhelming, seems out of reach or unattainable for your lifestyle.  but let me tell you, if good health, energy, and vitality are a priority to you, then get-a-plannin!  and don't give up...keep practicing.  most people these days are busy, it is not just you!  you need to find a way to fit it in!  hey, it may be easier than you think! and fun!  here is what i have planned for dinner this week....
sunday (last night) - thai style peanut butter and coconut pasta with broccoli, green peppers, and tofu
monday - leek and arugula frittata with blue cheese and fresh herbs and green salad
tuesday - baked salmon with homemade pesto and roasted beets, carrots, and leeks
wednesday - bison burgers with fresh tomatoes and garlic sauteed kale
thursday - sardine pasta with green olives, lemon, olive oil, and parm
friday - homemade pizza
