again, I do not follow the Paleo diet, but I do get a lot of inspiration from their recipes because I do eat very similar...meaning, I eat a lot of veggies and fruits, lean meats, and good fats.

Ryan is going to follow the diet for a month or so just to see how his body reacts, and he wanted to create a good homemade snack bar, so here ya go....

20 dates, pitted
3/4 cup boiling water

1/4 cup ground flax
1/4 cup almond flour (or ground almonds)
1/2 cup shredded or flaked coconut, unsweetened
1/2 cup chopped nuts...pecans, walnuts, cashews
2 scoops whey protein powder, we use Bipro
1/2 tsp salt

1/4 cup almond butter
1 tsp honey

1/2 cup dried fruit...cranberries, cherries, raisins

preheat oven to 350F.
pour boiling water over dates and allow to soak for 5 minutes, then puree dates AND water using food processor or blender.  this will create a date paste.  set aside. 

mix together dry ingredients (flax-salt), then add date puree and other wet ingredients (almond butter and honey) and mix gently but thoroughly.  then fold in dried fruit.  

pour into lightly greased 8 x 8 square baking dish. smooth out surface.  

 bake at 350F for 20 minutes.  allow to cool and then cut into 8 pieces.  store in airtight container.
