ok, ok, i really can't use just one word to describe it!   here are some others....

taste bud tantalizing...more than one i know...anyhoo, it was VERY GOOD!

Beet, carrot, and cucumber salad tossed with balsamic honey dressing and topped with celery leaves, raisins, walnuts, and microgreens.
beets - 2-3 large or 4-6 small, any variety, i had red and Chioggia(I think)
carrots - 4-6 medium or 10-12 baby
cucumber - 2 small or one large
celery leaves - about 1/4 cup, roughly chopped (optional, but awesome!)
raisins - 1/4 cup (1.5oz)
toasted walnuts - 1/4 cup (1oz)
microgreens - 1-2 cups (optional, may be hard to find!)

balsamic honey dressing
balsamic vinegar - 1.5 tbsp
extra virgin olive oil - 1 tbsp
honey - 1 tsp
salt/pepper - to taste

cut tops and bottoms off beets, carrots, and cucumber, and cut into equal sized pieces, i did matchstick style.  you could also shred them up if you want a finer/lighter texture.  toss the cut veggies with the dressing, divide up on plates - makes 2 entree sized or 4 side dish portions - top with raisins, walnuts, celery leaves, and microgreens.  after you have admired it for at least 2 minutes, toss it all together and ENJOY...slowly!!!


to get a little protein in, i served it with dijon, dill, and caper tuna toast...


You can also clap your hands before you dig in like my friend Jane!  that is when you know you truly enjoy good food!
