i have eaten quinoa everyday this week!  mostly for one of my mid-day meals, mixed with leftover salmon, beans and arugula.  i also used it in a somewhat sweet application....quinoa pudding.  since ryan was trying to stay away from both gluten and dairy this week (which ended last night, since we went out and ate bread and had a cadbury egg!) i made a version without any dairy (cream or milk).  here is what i did.... it was pretty good, but i do want to make another version with milk for a little more creaminess and thickness, more like a rice pudding.
3/4 cup quinoa (dry)
1.5 cups water
1/3 cup raisins
1/4 cup juice
1/4 cup coconut milk
zest of 1/2 orange
1 tsp vanilla
1/2 t cinnamon
rinse and cook quinoa in simmering water for about 10 minutes, then add raisins and cook another 5 minutes.  blend together remaining ingredients and add to quinoa and cook another 5 minutes (20 minutes total cook time).  let cool a bit and serve warm or room temp.  i think it needed a little more sweetness if you want to consider it a dessert, so maybe some agave nectar or brown sugar.  i also put some vanilla soy milk on top of mine. 
all the quinoa is gone....i finished it today with some red pepper hummus.   making a huge batch to eat from for the whole week is such a wonderful idea and doesn't take much time at all, because it cooks in less than 15 minutes.  i hope you try it!  and definitely make the spinach quinoa bake from the previous post....it was very good, especially topped with a little goat cheese!!!
