as i mentioned before, this week seems to be all about shortcuts, which is ok once in a while!  sometimes you just need a break ya know!  plus, i am anticipating the opening of the Athens farmers market in April, which will bring about more prep....and hopefully more exciting recipes!   like it says on my dense deep thoughts page....preparing a meal nourishes the soul!  i have chatted with a lot of people lately about their use of pre-shredded bagged broccoli slaw mix, and most of them use it for cold dishes.  i have also done a cold Asian slaw, which actually works amazingly well as a hot dish too!  many of the same ingredients are used...
Asian Broccoli Slaw Stir-fry
one 12-16oz bag broccoli slaw
2 garlic cloves, minced
1" piece fresh ginger, peeled and minced
3 tbsp soy sauce or Braggs liquid aminos
3 tbsp rice vinegar, both seasoned and unseasoned will work
2 tbsp sesame oil, i like toasted
1/2 tsp chili sauce or red pepper flakes

put everything it a large pre-heated non-stick skillet over medium heat and cook, stirring occasionally, until veggie texture is to your liking and most of the liquid is absorbed.  about 5-10 minutes.  that simple!

i served it with some frozen veggie eggrolls....more help from the store!

in continuing with the less prep theme, tonight i am doing another quick fix...BUT, still super nutrient dense!
i am very lucky to be surrounded by so many people that want to share their treasured food products with me!  Carol, a client of mine, gave me some wonderful canned alderwood smoked salmon from Alaska that she orders on-line, and tonight i am using it to create a super rich and flavorful (hopefully) pasta dish with brown rice spiral noodles, kalamata olives, capers, artichoke hearts, olive oil, and lemon.  ooooo......i can't wait!
