last night, we had coconut and panko crusted salmon with lime coconut broccoli stir-fry.  very satisfying! 

2  4-6 ounce salmon fillets
1/4 cup shredded unsweetened coconut
1/4 cup panko
1/2 tsp kosher salt
1/4 cup + 2 tbsp fresh lime juice
1/2 cup light coconut milk
2 tbsp light soy sauce or Bragg liquid aminos
2 garlic cloves, minced
1 head of broccoli, cut into bite-size pieces
olive oil

Pre-heat oven to 450.  Place the 2 tbsp lime juice in a large bowl.  Combine shredded coconut, panko, and salt in another bowl.  Dip salmon fillets in lime juice and then in coconut/panko mixture on non-skin side.  Place crusted fillets on cookie sheet or shallow baking dish, crust side up, and pack the remaining mixture on top to create an even thicker crust.  Spray or drizzle tops with a little oil so it will brown in the oven.  Bake for 15 minutes.
While salmon is baking, saute broccoli in large skillet over medium-high heat in some olive oil.  Mix together 1/4 cup lime juice, coconut milk, soy sauce and garlic.  Once broccoli has started to soften up and brown a bit, add the sauce, and cook another 5 minutes.
