aka...egg muffins!

2 bell peppers, any color, small dice
1 big or 8-10 baby zucchini, small dice
2 leeks, small dice
1 tbsp olive oil
4oz crumbled feta cheese
6 whole eggs

6 egg whites (or 3/4 cup)
1/2 tsp salt

preheat oven to 350.  heat up large skillet over medium high heat.  add oil and all veggies.  sauté for 8-10 minutes until softened a bit.  remove from heat and mix feta gently into veggies.  fill lightly greased muffin tin (one dozen regular sized) equally with veggie/feta mix.  beat up eggs, whites, salt and pepper with a whisk and pour slowly and equally into muffin tin over the veggies.  with a fork, gently move veggies around in each cup so the eggs disperse evenly.  bake for 20 minutes.  allow to cool for 10 minutes.  this makes 4 servings.  enjoy with a salad and/or side of fruit.  good for breakfast, lunch or dinner!!!
