thanks for all your suggestions on facebook everyone!  i have decided to do almonds AND blueberries this week.  they actually go great together and are a gem on their own!  we should all know by now that almonds are super high in mono-unsaturated fatty acids, which are heart healthy, and blueberries are one of the best suppliers of anthocyanins, which is a flavonoid that protects against the signs of aging, including memory loss!  so far this week i have made almond blueberry molasses muffins, almond crusted tilapia with wild blueberry couscous, & white gazpacho.
i simply coated the tilapia fillets in almond flour and a little parmesan cheese and then sprayed them with canola oil and baked them at 375 for 15-20 minutes, then i turned the oven to broil for the last 5 minutes to brown the top.  for the couscous, i just boiled one cup water then added one cup couscous, remove from heat and cover for 5 minutes, fluff with fork, and add 1.5oz dried wild blueberries, 2-4T extra virgin olive oil, 2-4T red wine vinegar, and some salt.  one cup dry couscous serves 3-4 people.

for muffins....mix wet ingredients...1/2 cup sugar, 1/2 cup molasses, 2 eggs, 1/4 cup oil, 1/4 cup applesauce
mix dry ingredients....1 cup whole wheat flour, 1 cup almond flour, 1/2 t baking powder, 1t baking soda, 1/2t salt
add dry to wet and mix, then add 3oz dried blueberries (fresh would work too!), then add 1/2 cup buttermilk
if you wanted to beef them up a bit, you could add ground flax and/or whey protein powder!  this makes 12.

i also made some white gazpacho, which is a chilled white soup using grapes, blanched almonds, garlic, vinegar, and a little creaminess from either heavy cream or mascarpone cheese.  I played around with those flavors in the blender and it ended up being "interesting!"  i thought it was really good at first, then i got sick of it fast!   maybe too much garlic!!!

this week, i am also doing salmon with blueberries sauce.  i always look for ways to do a different twist on salmon, because i like to include it EVERY week!   kale and almond butter pasta.  i attempted to make my own almond butter yesterday.  it turned out OK....i little firmer than i hoped.  i may throw it back in the food processor and see if it will get creamier.  store bought kind is so damn expensive!  any tips on homemade almond butter???
i may also try a blueberries risotto...hhhmmm....topped with almonds.  may be another "interesting" one!
