having a great week with legumes...and i am definitely NOT floating away!  hehe
tuesday night, we had lentil soup, super simple...4 cups vegetable broth, 8oz lentils, 2-3 diced new potatoes, 3 diced celery stalks, 1/2 chopped onion, 2-3 minced garlic cloves, 1 can diced tomatoes, salt, pepper, 1 tsp ground cumin and coriander, all in the crock-pot on high for 4-5 hours.  served it with a piece of whole wheat toast.  even better the next day!
i made some hummus wednesday morning...one can chick-peas (garbonzo beans) drained and rinsed, 2 garlic cloves, 3 TBSP toasted sesame seeds (or tahini), zest and juice from one lemon, 1/2 tsp salt and pepper, and a handful of parsley....throw it all in a food processor, pulse a few times, then turn on low and stream in 1/4 cup olive oil until nice and smooth!  serve with raw veggies or smear on toast or pita.  or mix with a hot grain like barley, quinoa, or bulgur wheat for a creamy delight. 
wednesday night, i took a break from legumes and had a high fat meal instead....good fat of course!!!  i actually ate sardines!!  and they were good!!!  i did a sardine pasta with olive oil, garlic, lemon, parsley, capers, and parmesan cheese and a side salad with arugula, avocado, and thick, rich, sweet balsamic dressing......great tip...heat up and reduce balsamic vinegar before putting it on salad...it becomes an awesomely sweet low-fat dressing and goes great with spicy arugula!  try out this pasta sometime....the sardines pretty much melt away and leave a salty, rich tasting, only slightly fishy flavor.  sardines are SUPER high in omega 3 fatty acids!  buy canned brisling sardines, they are the best!  here is the link to the recipe i used to guide me...sardine pasta     i almost always modify recipes!
tonight, it is 3 bean salad with coconut shrimp.  tomorrow, i am making venison chili again with kidney beans, and this weekend i am attempting black bean brownies!!! yes, you heard right!  this recipe was forwarded to me by my sister in law, Heather....sounds very interesting!  have you tried it out yet H-bomb?
