still lots of veggies OF COURSE!!!  i bought a few more meat products this week than i usually do.  i am also taking a few shortcuts in meal prep.  here is one of them...

monday night i did some crockpot pork loin and served it over polenta rounds.  since the polenta was already cooked and ready to heat and eat, i simply slid it out of the tube, cut it up into rounds, salted and peppered both sides, and crisped it up a bit in a lightly oiled skillet, 3-4 minutes a side.  i was able to cut up 9 (about 1/2") rounds, which was enough for 3 people....and we had a dinner guest that night, so it worked out perfectly! 

here is what i threw in the crockpot...
one large can whole plum tomatoes with basil
one small head of green cabbage, shredded
one yellow onion, diced
4 garlic cloves, minced
one yellow pepper, diced
2 bay leaves
about 3/4 cup water
2 tsp kosher salt
1 tsp fresh ground black pepper
one pound loin of pork

-mix first 9 ingredients together in crockpot, then make a space for the pork loin and burrow it down into the mixture.  cover and cook on low for 8-10 hours.  turn pork loin a couple times in the first 6 hours.  in the last two hours, start pulling the pork apart with a fork.  here is what the final product should look like...

this makes A LOT, probably 8 decent sized servings!  remember to take out the bay leaves! 
the leftovers can be served on top of rice, quinoa, or potatoes.
place 3 polenta rounds on a plate and top with about a cup of the mixture.  make sure to get some of the liquid for the polenta to soak up!

the pork was VERY tender and the veggies were soft and hearty!

this is a great dinner to make on a day when your morning is a little less busy and your afternoon/evening is super busy!  i like doing crockpot dinners on either monday or tuesday because that is when i am the busiest at night.  plus, i almost always have leftovers to eat off of for the rest of the week! 

our friend keith has been inspired by Deliciously Dense and has expanded his vegetables by 100%....he went from just broccoli to broccoli and kale!  this week, he hopes to expand again to 4....adding carrots and peppers into the mix!
