another CRAZY FOR CURRY dish.  this time, i made my own curry paste, instead of using a can.

Curry paste
1 tbsp fresh lime juice, use the remainder of the lime for garnish
2 tbsp tahini (sesame paste)
1 tbsp soy sauce or Bragg Liquid Aminos
2 tsp mild curry powder
1/2 tsp fish sauce
1/4 tsp cayenne

mix everything together thoroughly with a whisk.  set aside.


i call this dish green curry stir-fry because all the veggies i used were green.  i didn't plan it.....that is just what i had on hand! 

1 cup shelled edamame (fresh or frozen)
3 medium zucchini, medium dice
1 green bell pepper, medium dice

heat up 2 tbsp olive, canola, or grapeseed oil over medium-high heat in a large non-stick skillet.  add veggies and saute (stirring frequently) for 10-15 minutes until they are slightly browned and tender.

2 garlic cloves, minced
1 inch cube fresh ginger, peeled and minced

1 cup light coconut
fresh basil (optional)


add garlic and ginger and saute another 2-3 minutes.  reduce heat to medium-low, add curry paste and coconut milk and combine gently but thoroughly, and cook another 2-3 minutes or until desired thickness.  top with basil if you have it, chiffonade or rough chop.



squeeze extra lime juice over top if you like.



i have had a pretty busy week, work-wise and exercise-wise.  2 runs, a 5 miler and a 4 miler on the trails, and tomorrow is the Game Day.   feeling REALLY good!  this weekend i do hope to relax a bit.  not much going on.   getting ready to make some sushi rolls for dinner with fresh tuna, avocado, red pepper, cucumber, and of course sticky rice and nori.  yay for me.  and a glass of vinho verde to go along with!  have a wonderful weekend!
