three really tasty, really easy meals this week.  some are semi-homemade, which is totally fine in my mind!  

veggies were the main dish this week and proteins were the sides.

first up, sun-dried tomato broccoli slaw salad.
1 bag of broccoli slaw, 12oz (shredded broccoli and carrots)
1oz sun-dried tomatoes, packed in oil, drained, roughly chopped if whole
juice from one lemon
2 tbsp extra virgin olive oil
2 tbsp red wine or balsamic vinegar
1 tbsp nutritional yeast (optional)
salt and pepper, 1/4-1/2 tsp each
1oz crumbled feta cheese (optional)


toss everything together.  let it sit at room temp for about 30 minutes OR keep in fridge until ready to eat, typically gets better the longer it sits, the flavors meld together!  i served this with some oven roasted pork tenderloin.  marinated it in about 2 tbsp soy sauce, 2 tbsp maple syrup, and 1 tbsp dijon mustard overnight.  roasted at 425 for 25 minutes.

stir-fry cabbage and store bought crab cake.
1 tbsp coconut oil
1 bag chopped/shredded cabbage (green and red if possible) OR cut up one medium head
2 tbsp soy sauce
2 tbsp rice wine vinegar
1 tbsp sesame oil
1 tsp honey
juice from one lime
1 tsp ground coriander (optional)


heat up oil in large non-stick skillet over medium high heat.  add cabbage and sauté until tender and slightly browned, about ten minutes.  add all other ingredients and cook another 2-3 minutes.  serve with protein of choice.

venison taco soup.
1/2 pound ground venison or beef or bison
1 can black beans, drained and rinsed
1 can diced tomatoes with chilies
1 can tomato sauce
1/2 packet taco seasoning
1 cup canned pumpkin or cooked sweet potato (optional, makes it more nutrient dense!)
greek yogurt, cheddar cheese, tortilla chips (optional)


combine all (except yogurt, cheese and chips) in crockpot.  cook on low for 5-6 hours.  top with yogurt, cheese, and/or chips if you like.  

all of the recipes serve two.  double if want it to serve four.  sometimes i really enjoy easy weeks, especially before Christmas.  hope they are easy for you as well :)
