with fresh rainbow trout cooked in parchment.

got some wonderful rainbow trout from Shiraz yesterday.   it was the whole fish without the head, tail, scales, and bones.  it was perfect for stuffing!  so that's what i did!

i opened it up, seasoned it well with salt and pepper, topped it with some sliced lemons, some onion scapes, and some sage leaves, and folded it back up.

then i placed it on a piece of parchment paper and topped it with another piece, and i folded/crimped the edges of the paper so it sealed the fish up and made a nice package.  this keeps all the flavors in and steams the fish a bit for a super light and flaky texture. 

put on a sheet pan and bake at 375 for 15 minutes.  this piece of fish was 8oz.  let rest for about 5 minutes, then open package and flake fish from the skin.  i chose not to eat the aromatics, but you can if you like. 

for the salad...
3 kohlrabi bulbs (purple or green), skin taken off* and cut into a small dice
4-6 small carrots or 2-3 large carrots, peeled if you prefer, small dice
1/2 cucumber, peeled if you prefer, small dice
1/2 cup plain low-fat kefir or greek yogurt
1 tbsp fresh lemon juice
zest of 1/2 lemon
1 tsp dill, fresh or dried
1/4 tsp salt
pepper to taste
*the kohlrabi skin is very tough!  use a paring knife and carefully cut/pull it away from the flesh.  once skin is removed, the soft bulb should be super easy to dice up. 

mix everything together.  this is a CRUNCHY salad.  you can shred up the veggies instead of dicing them up for a finer/softer texture. 

enjoy as a cool side dish to your flavorful flaky fish!

i am excited for a super fun day tomorrow...got a lot on tap!  of course my early super circuit class!  then, i hope to do the Twilight 5k...if i am able to register late!   then the Good Food Block Party at Farm255, sponsored by the Athens Farmers Market, i plan to get there around 1:30 to taste all the amazing food, including some dishes by Top Chef Masters contestant Hugh Acheson!  then dinner with friends at Big City Bread.  then the annual Athens Twilight Criterium later that night with some drinks in hand!!! 
big sunday planned as well.  going to Lake Lanier to bike the Irongirl triathlon course with novice tri-gal Jane Smith.  should be fun.  the race is in 2 weeks!!! 

tonight's dinner....healthy hash with baby gold potatoes, ground venison, and kohlrabi leaves....you didn't think i threw those out did ya?!
