2 large broccoli crowns, just use the flowers, save the stems for something else, like stir-fry or soup
1 packed tbsp sage leaves
1/3 heaping cup walnut halves and/or pieces
1 garlic clove and/or 4 scallions
juice from 1/2 lemon
1/4 cup grated parm cheese
1/2 tsp salt
1/4 tsp pepper
2/3 cup stock, chicken or veggie
2 tbsp extra virgin olive oil

put everything, except oil and stock, in the food processor (oh how i LOVE my food processor!) and pulse on low until the majority of it is broken up, then turn on low and stream in stock and oil until a smooth, creamy, yet slightly chunky, consistency appears. 


i served mine with whole wheat spaghetti and edamame.


if you do decide to go the pasta route, it should make 4 decent servings.  cook up 10-12oz dry pasta and 1 cup frozen shelled edamame.  complete meal!!!


i have been a little worn out lately.  i really think it is allergies!  i think something new is in the air, something that hasn't been around the past several years, because i am usually totally fine during the spring months when everyone else is suffering!   i did however get in a HARD tempo bike ride yesterday....one last hard effort before my tri.  i did 17 hilly miles, with the wind i might add, in 53.5 minutes, 4 minutes faster than last time i did it!!!  i hope to hold a 20mph average in the race!  today i made 16 dozen muffins, and tomorrow i got another 5k, then it is off to the lake for an open water swim!   busy, but fun weekend again!  have a great one all! 

oh, and i have decided to start composting again...enough is enough with this garbage!  i need to start doing my part!!!  more on that later.
