stuffed swiss chard leaves!

for the stuffing, saute 1/2 an onion, 1/2 a yellow/red pepper, 2 cloves garlic, the stems of the chard leaves, (all these ingredients should be small diced) and one cup corn kernels (i used frozen) in some olive oil until soft.  then mix that with 1/2 cup cooked quinoa, 1/2 cup cooked or canned black beans, and 3 oz feta cheese.  preheat oven to 375.   place the smaller chard leaves in the bottom of a lightly sprayed baking dish.  use the larger leaves for stuffing.  place about 1/4 cup of the stuffing mixture in the center of each leaf and roll up into a bundle, place down in the baking dish.  i had about 9 big leaves, then i put the rest of the stuffing on top.  pour some liquid over top, about 1/2 cup white wine or chicken/vegetable stock (i used wine!!!!), cover with foil and bake for 30-40 minutes.  everything was perfectly cooked! nice and soft, but not too mushy!  i added a little salt, but thought it was a little too salty because the feta cheese does have a lot of sodium, so judge for yourself! 

here is what the raw chard looks like before it was stuffed.  the leaves we got had bright red/pink and yellow stems.
