well, messed this one up a bit!  ok, ok, not a bit, a total botch!  see, even da mastas (yea right, totally kidding, far from it!...and if you didn't catch that, i meant 'the masters'...hehe) make mistakes here and there!  

i started with some brilliant, vibrant, extraordinary colors...

and ended up with this...

aaahhh...."dooky down da hatch" as ryan so slyly said as he sat down to eat!  no worries, i can take the hit...but next time it will look like THIS

so what the %*&# happened?!  i have a couple of guesses. 
1) i cooked it too long and the bright red color got burned out and turned out!
2) i added the beet greens, which looking back on it was a really stupid idea and i should have known better!  mixing green and red usually does create BROWN! 

here was my original recipe...everything thrown in the crockpot...
4 cups veg stock + one cup water
1 chopped onion
4 chopped beets
1 peeled and chopped russet potato
10oz chopped cabbage
4 small chopped carrots
2 tbsp white vinegar
1/4 cup chopped dill
2 tsp salt

i cooked it on low for 8 hours, which may have been too long, AND like i said before, in a last minute decision, i added the beet greens as well.  at the end of the cooking process i pureed it with my immersion blender. 
it actually tasted fine, more than fine to tell ya the truth....and there was absolutely no way i wasn't going to eat it, i would never waste all those beautiful vegetables!  i have a ton left too, so it looks like dooky will be on the menu for a couple more days!!!   even though you do eat with your eyes first, sometimes you gotta look past the poo, and simply sava the flava instead!  ;)   here's to making mistakes, learning from them, and doing it better next time!
