baby red potatoes, collard greens, trout, and garlic oil

organic veggies, omega 3 rich fish, and homemade garlic oil were the main ingredients....make your own garlic oil by heating up some olive oil (3-4 tbsp) over medium heat, drop in some fresh smashed garlic (a clove or two), cook for 2 minutes, then pour into bowl and let it soak for 30min-1hour.

red potatoes were boiled whole, cooled off, then smashed with my hand and place in a cast iron skillet with the garlic oil and cooked on pretty high heat until a crust was formed on the bottom.

i then topped them with some fresh parm cheese, salt and pepper, and placed them under the broiler so the top was crispy/crunchy/crusty as well!

trout was super simple!  i covered it with a chipotle pepper seasoning mix, drizzled it with a little garlic oil, and broiled it on low (with oven door closed) for 12 minutes, then on high (with oven door open) for 3 minutes....15 min total time.  take out and let rest for 5 minutes.  while fish is resting....that is when you put in the potatoes, broil on high for 3-5 minutes until top is brown and crusty!

greens were also simple as can be!  chop up roughly, then simple saute in the garlic oil, salt and pepper, and a little red wine vinegar at the end to finish them off.  i don't cook them too long because i prefer a little texture and bite in my greens!  plus, i enjoy the slightly bitter taste! 

layer your food for a pretty presentation!  potatoes on bottom, greens on top of potatoes, and fish on top of greens.

not much left huh?  the fish was great, very similar to salmon.

3-4 tbsp olive oil
2-3 garlic cloves
, smashed
4-5 baby red potatoes
one bunch of collard greens, roughly chopped (4-5 cups)
1 tbsp red wine or another type of vinegar
10oz fish- trout, salmon, or your fave!
blackening spices....chipotle pepper, smoked paprika, garlic powder, tumeric, cracked pepper, your taste!
