topped with cinnamon and sour cream sweet potato mash!  pretty descriptive title huh?! 



another crockpot wonder!

Black Bean and Bulgur Mole Chili
1 onion, small dice
4 garlic cloves, minced
1 14.5oz can fire-roasted diced tomatoes
1 14.5oz can black beans, drained and rinsed
1/4 cup raisins
1 tbsp chili powder
2 tsp cocoa powder
1 tsp ground coriander
1 tsp dried oregano or Italian seasoning mix
1 tsp salt
1 chipotle chile in adobo sauce from a can, minced...i used 2 and took the seeds out and it was pretty darn spicy!
2 cups water
1/3 cup bulgur aka cracked wheat



Bulgur is simply whole grain wheat kernels that have been cracked.  each kernel is a WHOLE GRAIN, meaning it still contains the outer bran, the inner germ, and the endosperm.


one serving (1/4 cup dry) has 7 grams of dietary fiber and 5 grams of protein!


Sweet Potato Mash
12oz cooked sweet potato - i baked it at 350 for an hour
2 tbsp fat-free sour cream
1/4 tsp ground cinnamon
fresh thyme to top it off (optional)



For the chili, put everything, except the bulgur, in a crockpot and cook on low for 5-6 hours.  In the last 20-30 minutes, add the bulgur. 
I call this chili a mole because it contains cocoa, chipotles, and raisins, which are some common ingredients in traditional mole sauces.  Is this version super authentic....absolutely not! 



But it sure was super flavorful and super yummy! 


You don't have to have a crockpot to enjoy this recipe.  You could also do it on the stove-top by cooking the onion and garlic in a little bit of olive oil in a large pot for a few minutes, then add the remaining ingredients (not the buglur) and cook on medium-low heat for about 2 hours, adding the bulgur in the last 15-20 minutes.


Tonight, it is smoked salmon chowder, but i don't think i will get around to posting the recipe until next week!
