Mini Kale and Quinoa Frittatas

 Mini Kale and Quinoa Frittatas with Sliced Avocado 
Makes 4 servings - great for lunch too!

Quinoa, cooked - 2 cups

Kale - 2 cups, shredded/finely chopped

Eggs - 6 whole, lightly whisked 

Cheddar cheese, shredded, sharp - 4oz (about 1 cup)

Greek yogurt, plain, non-fat - 8oz (about 1 cup)

Salt – 1/2 tsp

Pepper – 1/2 tsp

Avocado - 2 large, ripe

Quinoa and Collard Green Lasagna

  • Quinoa, cooked - 4 cups
  • Tomato sauce - 1 (15oz) can
  • Oregano, dried - 1 tbsp
  • Garlic powder - 1 tsp
  • Egg - 1 large, beaten
  • Parmesan cheese, grated- 1/2 cup
  • Collard greens - about 16 halves, take 8 large leaves and cut each half away from middle rib
  • Mozzarella Cheese, shredded - 8oz
