Exceptionally Easy

three really tasty, really easy meals this week.  some are semi-homemade, which is totally fine in my mind!  

veggies were the main dish this week and proteins were the sides.

first up, sun-dried tomato broccoli slaw salad.
1 bag of broccoli slaw, 12oz (shredded broccoli and carrots)
1oz sun-dried tomatoes, packed in oil, drained, roughly chopped if whole
juice from one lemon
2 tbsp extra virgin olive oil
2 tbsp red wine or balsamic vinegar
1 tbsp nutritional yeast (optional)
salt and pepper, 1/4-1/2 ...

Brussels Sprout Frittata with Avocado "Cream" Sauce

Around 6oz of Brussels sprouts, thinly shaved, either buy them whole and carefully slice very thinly with a sharp chef's knife or buy them already shaved in bag.
1/2 medium leek or small shallot, small dice
1tsp olive oil
4 eggs + 1/2 cup egg whites
Salt and pepper
-Preheat oven to 350. Heat a medium, oven proof skillet, cast-iron is best, over medium heat. Add oil, leeks/shallots, and Brussels. Sauté for 5-10 minutes, until lightly browned and softened. Whisk eggs and whites together and season ...

Roast chicken and broccoli with coconut curry rice and tahini sauce

One big-ass chicken breast(or 2 small ones), on the bone, I took the skin off
Oil(olive or coconut), salt, pepper
1 cup brown rice, I used par-cooked brown basmati
1 can (14oz) light coconut milk
3/4 cup chicken stock
2 tsp curry powder
1/2 tsp salt
12-16 oz broccoli, cut into bite size pieces, one big head or big bag(pre-cut)
2 cloves garlic, minced
1 square inch piece of fresh ginger, peeled and minced (optional)
1 tbsp coconut oil
2 tbsp tahini
1 tbsp soy sauce or Bragg liquid aminos

Chicken sausage, kale, and quinoa risotto

Ingredients:
12oz chicken or turkey sausage, pre-cooked links, cut into bite sized pieces
1 tbsp olive oil
2 garlic cloves, minced
1 cup quinoa(dry), rinsed*
1/3 cup wine, dry white or red will work, I used a Shiraz
3 cups chicken stock
1 cup marinara sauce
4 cups finely chopped kale, I put it in food processor
1/4 tsp salt, pepper
Juice from one lemon
2oz crumbled feta cheese
Avocado slices, optional

*most quinoa, unless indicated that it has been pre-rinsed, should be thoroughly rinsed with cold water. ...
