Super Simple Stuff

here is what I did this week with my veggies....

Snap peas - sauted for just a couple minutes in some light olive oil in a non-stick skillet over medium heat until lightly browned, then drizzled with a little sesame oil and topped with toasted sesame seeds.  served with crisped up tofu.

Kale - roughly chopped and put on pizza along with red peppers and goat cheese


Brussels Sprout greens - they are the leaves that grow out of the stalks of the Brussels sprouts.  they have a slightly citrus flavor...

What I did with my FM veggies

Here is what I got at the Athens Farmers Market last Saturday...
Golden Beets
Mixed Salad Greens
Cherry Tomatoes
Carrots
Sprouted Broccoli
Green Peppers
Green Garlic
Fennel
Strawberries

Here is what I did with them...
the strawberries were gone within 2 days...yum yum!  a topping for pancakes or waffles or in smoothies. 

the carrots and cherry tomatoes were used for snacks or in lunches, either simply dipped in hummus or put in a tuna wrap or lentil and quinoa bowl.

First Trip to the Farmers Market

It's that time of year again.  Fresh, local produce, as well as many other goodies, are available at the Athens Farmers Market. 
This is where I get the majority of my produce between the months of April and November.  Here is what I got for this week....

from left to right...golden beets, salad greens, cherry tomatoes, carrots, honey, sprouted broccoli, green garlic, peppers, eggs, and fennel.  i also got a pint of strawberries (not pictured).

An old recipe brought back to life!

This recipe is almost a year old and i brought it back to life last week and made it again tonight.

Orange Ginger Stir-Fry


8oz ground venison, bison, or beef (grass-fed if you can find it!)
1 square inch piece fresh ginger, peeled and finely minced or grated
2-3 garlic cloves, minced
zest from one orange, about 1 tbsp
1/2 cup orange juice (fresh is best!)
3 tbsp soy sauce (or Bragg Liquid Aminos)
1 tbsp honey (go for local of course!)
1 tbsp sesame oil
