Roasted Brussels - two ways

what will you like best....Asian or Italian inspired? 

this was a trial run to see which version i am going to make for Thanksgiving.

First thing's first...had to take a pic of my beautiful sprout tree...


Broke off each sprout, cut the big ones in quarters and the small ones in half (lengthwise), and washed thoroughly. 


Ended up with about 3 pounds...that's a lot of Brussels!

I got my FREEKEH on!!!

another new grain to add to my list...or so i thought...i JUST learned that...freekeh is a process, not a grain.  the grain i bought is actually called green wheat.  the FREEKEH process is picking the grain while still young and soft and sun-drying, fire-roasting, and cracking it to produce a richer flavor, while retaining the nutrients.  Freekeh supposedly is more nutrient dense than some other grains because it is picked at an early stage AND only air and fire are used during the drying pro...

it's that time of year again....

when you can actually find canned pumpkin in the grocery store!!!   did you know that most canned pumpkin is really Hubbard Squash?...very similar to Butternut Squash.  i use canned "pumpkin" a lot!  mostly for my pumpkin muffins.  but, i do use fresh pumpkins as well, which is what i did for my pumpkin ginger curry soup. 


i found a new way to cook the pumpkin...in my crockpot.  typically, i would cut open the pumpkin lengthwise, scoop out the seeds, then place each half face down on a baking...

Beets for my b-day

so, as you know, i LOVE roasting vegetables.  a simple olive oil, salt, and pepper coating before putting them in the oven usually does the trick, but sometimes i like to jazz it up a bit.  for my birthday dinner last wednesday, before we went to see the movie 50/50 (which was great) and had awful stale popcorn topped with (i don't think i have done this since highschool!) nasty artificial butter...bad decision!, i had roasted beets and turnips and mixed them with a fresh orange and red wine ...

Back to BREE

Ryan and I just got back from an amazing vacation out west.  We went to several National Parks...Zion, Grand Canyon, Arches, Canyonlands, Capital Reef, and Bryce....did a ton of strenuous hiking, about 86 miles total, saw some spectacular views, and ate a lot of high calorie, not so nutrient dense, food!  Many people are surprised when they hear that I don't eat well all the time, but hey....I AM NOT AN ALIEN!   i actually planned to eat relatively healthy and nutrient dense while on vaca, at...
