Sweet potato tacos

I have to give credit to a new trainer at our gym, Dalford, for letting me borrow the cookbook in which i received inspiration from for this recipe!  In the book, i believe the recipe was titled Bison and Sweet Potato Tacos.  I wrote down the majority of the ingredients, but didn't write down any specific amounts, because as you should know by now, I believe cooking is a very personal thing and you need to learn how to prepare most dishes according to your own personal palate profile!  Instea...

Seared scallops with artichoke and white bean puree

12oz sea scallops (6-10)  sea scallops are the large kind, bay scallops are the tiny kind
2 tbsp oil, grapeseed oil is a good choice here because you are cooking at high heat, but olive oil works too.
1 can (14.5oz) white (cannellini) beans, drained and rinsed
1 can (14.5oz) artichoke hearts, drained
1 clove garlic
salt/pepper to taste
1 small bunch of chives (optional)  adds great flavor, you could also add another herb like parsley or basil
2 tbsp nutritional yeast (optional)  adds great flavor

Nutrient Dense Indulgence

Saturday night, after a great day of running and tailgating, I went to my good friends Jane and Kevin's house to have some wonderful food.  It was quite spectacular I must say!...AND, pretty nutrient dense!   I almost always enjoy indulgent meals at home more than I do out.  Especially if the cook knows what they are doing!  Jane whipped up some amazing dishes.  It starting with an app of chanterelles on toast, a recipe from Hugh Acheson's new cookbook...check out his website... http://hughac...

Somethin's better than nothin!
