last day on my "almost vegan" diet

well it is january 31st and it is the last day of my experiment, or should i say adventure.  i guess it wasn't really an experiment because i didn't measure anything.  i didn't look at blood work, i didn't record anything about energy levels, sleep patterns, or number of times i went to the potty(#2!) each day, and i didn't monitor my weight and bodyfat, even though i am pretty sure i lost about 3 pounds, but i do have some observations to report!

2nd dose of fennel for the week

this time it was raw.  fresh raw fennel is definitely not for everyone.  it has a pretty strong licorice or anise flavor. but don't give up on it after one try though...your palate can mature!   it is a very beautiful vegetable i must say!

after you chop off the fronds (greens at the top), cut it in half lengthwise and cut out the woody core.  you really don't want to eat this part, it is pretty tough!

farro and fennel, two unique dense ingredients you may want to try

here they are in a super flavorful and hearty dish with many other more widely used ingredients...

here is what ya need...3 Tbsp olive oil, 2 carrots, diced, 1/2 onion, diced, 3 celery stalks, diced, 1 bulb fennel, diced(don't forget to take out the woody core!), 1 cup shelled edamame(i use frozen), 1 bay leaf, 1 cup farro, 1/2 cup dry white wine, 2 cups veg stock, salt and pepper, 4oz (3/4cup) marinated artichoke hearts, diced, herbs - i used parsley, mint, and chives, about a tbsp each finel...

last week in my "almost vegan" adventure!

got some awesome inspiration from food and wine magazine over the weekend....thanks karen!!!  i really don't like following recipes exactly, and a lot of the ingredients were not available at Trader Joes today, so i made some major substitutions tonight and it ended up being super yummy!  instead of spaghetti squash, i used butternut, and instead of chickpeas, i used red kidney beans.  i really wanna call it 'spiced up stuffing'  but to give a better description, i will go with 'orange spiced...

had some real winners this weekend!

pumpkin risotto, vegan pizza, homemade nutella, and beautiful brussels.
for the risotto, which ryan ate a portion the size of his head!, i sauted 3 cloves garlic, 1/2 onion, and  1" cube of fresh ginger in some olive oil for 5-8 minutes, then i added 3/4 cup arborio rice and 1 cup edamame and cooked that for 3-5 minutes.  then i added 1/2 cup white wine and simmer until it was almost absorbed.  then you simply add warm stock (i used veggie, but chicken works too) one ladle full at a time and w...

inspiration from the pantry

this morning i was planning my meals for the week because we are hopefully going to make it to the store today to stock up and i was having a little trouble coming up with ideas, so i headed to the pantry.  i pulled things out from the back that had been there for a while and was immediately inspired!  sometimes the inspiration you need is closer than you think.  here are some of the things i found...

my snow days!

being cooped up in my house for the last 2 days because of snow has allowed me to work on some stuff that i usually push to the side.  i was able to get to the gym thank-goodness because i was able to walk, but was unable to train anyone due to horrible driving conditions for them.  thankfully, today a few clients managed to make it in!  BTW, if you are a member of APF, we had some workers come and scrape the parking lot today, so hopefully you can make it in the rest of the week!!!  anyhoo.....

new grain to add to my growing list

AMARANTH  heard of it?  cooked with it?  would love to hear some of your ideas/recipes!  this was my first time.  it is definitely a super grain.  i just figured out it is a complete protein!  has all the essential animo acids in the correct proportions!  great for vegheads!  6.5 grams of protein per 1/4 cup (dry) serving.  it did however through me for a little loop!  i thought that it would cook up more like quinoa or couscous, but it ended up having a texture very similar to grits or polen...

Asian flavors rock my world!

i just can't get enough! 

cabbage, yellow pepper, and edamame, sauted in a cast-iron skillet (which BTW gives your body IRON! a micro-nutrient that may be hard to consume enough of on a vegetarian/vegan diet)  then cooked with a sauce of fresh garlic and ginger, coconut milk, liquid aminos, sesame oil, green onions, chili sauce, a touch of fish sauce, and lime juice.  sooooooooo goooooooooood!   over rice noodles.  one serving of edamame (1/2 cup) is 13 grams of protein! complete protein!  to...

my pound of "free chicken - naturally" with $5 purchase at earthfare market today.  what does "naturally" or "natural" mean anyway?   well, i have been coming up with some interested ideas for this month.  a former client/friend who is a vegan gave me a few sites to go to for inspiration and i hope to do a version of THIS soon.  YUM!!!  last night was quinoa pie...i use this recipe and modify it a bit.  instead of cottage cheese, i use tofu.  tonight, i am doing an asian stir-fry over rice no...

so, i am going almost vegan for a month...along with ryan, my brother, ben and his fiance, jessica.  why?....just cause!  to see what happens.  to experiment!  i have always said that i could be a vegetarian, because i don't really like handling meat and it is usually not my favorite part of a meal, and within the last year i have come to enjoy vegetables so much that i literally crave them when i do not get enough.  the hard part for me will be the dairy.  so, no meat, poultry, or fish and n...
