did i stick to my plan???

pretty darn close!...a few minor changes. 

monday = veggie frittata and orange slices


 tuesday = salmon and pesto over balsamic arugula with roasted carrots, beets, leeks, and squash


wednesday = bison burger with swiss cheese on flatbread and crispy kale


thursday = sardine pasta with olives, garlic, fresh herbs, lemon, and parm


i don't have detailed recipes for these, but would be more than happy to give you tips on how to create them!  just let me know!  notice how on most of the pics, veggies a...

PLANNING!....

is a BIG key to good nutrition.  it takes practice.  it doesn't happen overnight.  it takes a little time and sacrifice.  but it is sooooo worth it.  body and mind!  i take about 15 minutes on sunday or monday and plan out my entire week.  it used to take me longer to do this, but again, with practice, it becomes easier and easier!  i also used to go through food phases, meaning i would eat the same thing on mondays, the same thing on tuesdays, etc, etc, for about 6-8 weeks, then i would chan...

sorry peeps!

i have been a bad blogger lately...so sorry to those of you who try to keep up!  it has been pretty busy around here!  since we used up most of our veggies from the farm this past weekend on our mountain/hiking trip in the Highlands, i really don't have any great ideas to share with you this week.  however, tonight i am attempting to re-create an amazing dish ryan and i had the night before our triathlon in Knoxville.  we had the Jose Jose Burrito from The Tomato Head.  we'll see how it goes....

Enjoy some Tatsoi!

i surely did last night!
made some sesame seared scallops with tatsoi and arugula couscous.  super yummy and super easy.
tatsoi is a green that looks similar to bokchoy with a taste similar to mustard greens.  i just chopped it up along with the arugula and let in steam in the pot along with the couscous then stirred it all together with a sauce of sesame oil, soy sauce, chili sauce, rice vinegar, grated ginger, and sesame seeds.  a little sweet, a little spicy, with a hint of bitterness.

bring on the flava...and the fat loss!

tonight i am upping the ante on a dish i made exactly a week ago.  last thursday, i roasted a bunch of green veggies along with some chopped garlic at 400 degrees for about an hour in just olive oil, salt and pepper and then tossed them with whole wheat pasta, lemon juice, parmesan, and i added canned sardines that were marinated in mediterranean flavors....it was so incredibly amazing, i swear i ate it in less than 2 minutes!  tonight, i am doing the same thing except i am using coconut oil ...

Bree's bountiful bundles

stuffed swiss chard leaves!

for the stuffing, saute 1/2 an onion, 1/2 a yellow/red pepper, 2 cloves garlic, the stems of the chard leaves, (all these ingredients should be small diced) and one cup corn kernels (i used frozen) in some olive oil until soft.  then mix that with 1/2 cup cooked quinoa, 1/2 cup cooked or canned black beans, and 3 oz feta cheese.  preheat oven to 375.   place the smaller chard leaves in the bottom of a lightly sprayed baking dish.  use the larger leaves for stuffing....

i have one more pea dish to make tomorrow....sweet pea pasta salad.

i have joined a local CSA...community supported agriculture....from Roots Farm, and i will be getting a basket of produce every week throughout the summer, so i will be picking my super foods from that.  this week i got kale, chard, radishes, onions, green lettuce, and a few more things...i already have some great ideas, so stay tuned!!!
