more....super simple summer stuff!

this week, the summer stuff continued and i made some awesome dishes with a little inspiration from some friends!

squash, corn, and tofu soup

in medium pot, saute 1/2 onion, 2-3 garlic gloves, and 4 medium summer squash(any variety will work) in 3 tbsp olive oil.  of course, chop all these veggies up, but it doesn't need to be perfect because they will get blended up later!  cook until just tender, 5-8 minutes.  then add about 1 cup fresh corn and cook only 1-2 minutes.  add 1-2 cups of vegetab...

summer stuff....

get it while the gettin is good!

i am talking about produce people....corn, tomatoes, berries, squash, cucumbers, peppers, beets, eggplant, grapes, melons, and clementines....just to name a few!   the last few weeks in the produce box that i get from a local farm, we have been getting tons of squash!!!!  i am trying to come up with interesting ways to use it!  and although it is not one of the most nutrient dense veggies (or should i say fruits) around, it is still very low in calories and ver...

nutrition idea of the week

make your own multi-purpose sauce...
you can use this as pasta sauce, pizza sauce, or thin it out for soup.
simply roast a bunch of veggies at 375 for 45min-1hr, i did beets, squash, eggplant, and carrots, along with some garlic, olive oil, salt and pepper.  make sure they are nice and soft/fork tender.  let them cool down a bit and then blend them up with either a little vegetable stock and/or tomato juice and some diced tomatoes.  keep the consistency somewhat thick so it can be used as a sau...
