mangetout...???

this means "eat all", which is the case with snow peas and sugar snap peas.   last night, i made salmon (of course, gotta have it every week!) and snow pea couscous.  i made a lot and my serving was huge, so i get to eat it again tonight! 

doesn't it look yummy!???
for the couscous, i boiled 1.5 cups of vegetable stock in a large pot, then took it off the heat and added one cup of couscous and about 2 cups of snow peas and one cup of fresh, cut green beans.  stirred it all together, then cover...

peas please!

peas definitely have a bad reputation!  considered a "starchy" vegetable by the USDA MyPyramid, they are grouped together with other vegetables that do not get enough love!  peas, corn, and potatoes are definitely under-rated super foods!  i am not too fond of mushy canned peas mind you, but as a child, i have great memories of eating fresh peas in the pod right off the vine in our backyard!  and actually, as i write this blog, i am sad that i do not incorporate them into my diet more often. ...

kale and almond butter pasta

i cooked down some kale in a large skillet with some chicken stock, sauteed up some diced chicken, and made a sauce out of the almond butter i made earlier in the week, soy sauce, sesame oil, chili paste, and rice vinegar.  i mixed everything together including the cooked whole wheat pasta and shaved some fresh ginger over top.  

it has got it all...
lean protein
whole grain
super veggie
good fats
tons of flavor!

BBs are da bomb!

especially when they are drowning some salmon!!!
 
this dish was labeled as "interesting" by ryan, which usually means it was "ok" and too weird, BUT this was pretty frickin amazing...we both agreed!  was it a little sweet?...yes.  so you gotta keep that in mind.  i would recommend this dish to someone who is just starting out with salmon, BUT is also open-minded!!!  the other strong flavors muted the fishy taste almost to nothing.  this is what i did....drizzled the salmon with olive oil and ...

Almonds, Blueberries, and a Couple more things!...here are a few simple ways to use almonds and blueberries...

almonds - almond pesto...simply roasted....almond butter

for a pesto, all you really need is a couple cups of a green herb or dark lettuce, like basil, parsley, cilantro, or arugula, 1-2 ounces of nuts or seeds, like almonds, walnuts, or pine nuts, 1-2 cloves garlic, 2-3T parmesan cheese, and 1/4-1/2 cup olive oil.  i also like to add lemon zest and juice.  and of course some salt and ...

makin up for my break...pulling double duty!

thanks for all your suggestions on facebook everyone!  i have decided to do almonds AND blueberries this week.  they actually go great together and are a gem on their own!  we should all know by now that almonds are super high in mono-unsaturated fatty acids, which are heart healthy, and blueberries are one of the best suppliers of anthocyanins, which is a flavonoid that protects against the signs of aging, including memory loss!  so far this week i have made almond blueberry molasses muffins...

my week in the seeds

i have eaten quinoa everyday this week!  mostly for one of my mid-day meals, mixed with leftover salmon, beans and arugula.  i also used it in a somewhat sweet application....quinoa pudding.  since ryan was trying to stay away from both gluten and dairy this week (which ended last night, since we went out and ate bread and had a cadbury egg!) i made a version without any dairy (cream or milk).  here is what i did.... it was pretty good, but i do want to make another version with milk for a li...
