don't really want to be creative tonight for dinner, but still want to make it healthful and hearty.....
chop up a bunch of veggies (good way to use leftover stuff!) in a small dice and saute them all together in olive oil and garlic, salt and pepper, and serve with grilled or baked chicken and top with basil and parmesan cheese. 

this is an easy fake out dish!  many may think you were super creative and took a lot of time preparing it, but really you just threw a bunch of stuff together...all mixed up in one pan.  great flavor, good presentation, super nutrient dense, moderate calories, hearty portion!  i used red peppers, eggplant, sweet corn, okra, and tomatoes.  remember, veggies should be at least half your plate at dinner! 
and for you figure competitors out there, i am eating this during prep!  no need to cut out these veggies!!!!
