Almonds, Blueberries, and a Couple more things!...here are a few simple ways to use almonds and blueberries...

almonds - almond pesto...simply roasted....almond butter

for a pesto, all you really need is a couple cups of a green herb or dark lettuce, like basil, parsley, cilantro, or arugula, 1-2 ounces of nuts or seeds, like almonds, walnuts, or pine nuts, 1-2 cloves garlic, 2-3T parmesan cheese, and 1/4-1/2 cup olive oil.  i also like to add lemon zest and juice.  and of course some salt and pepper.  put all this, except the oil, in a food processor and pulse until it is a paste, then stream in the olive oil until it is thick and rich.  pesto is so good on pasta, bread, with beans and rice, on top of soup, and as a dip for veggies.  fast and simple!

my method for roasted almonds is so simple it is funny!  205 degrees for 5 hours!  that's it!  brings out so much flavor without adding any extra stuff!

AND my almond butter worked out after all!  i put it back in the food processor for another 2-3 minutes and it got super creamy and spreadable!  only attempt to make almond butter if you have a good quality food processor.  smaller, cheaper ones will not cut it!  you need to process the nuts for 12-15 minutes!!!  and if you add any salt or sweeteners, this may firm it up (at least that is what i observed!), so it may need extra time.  so much cheaper than store bought!

as for blueberries, this is what i love to do with them....
put them in my morning oats, mix them with yogurt, use them in smoothies, and experiment with them in savory dishes!  this week i am going to use them with salmon and a savory risotto.  i am also going to make a somewhat savory dessert by mixing them with balsamic vinegar and serving that over sweetened ricotto cheese. how does that sound?
